Executive Chef Nathan Darling leads a team of exclusively hired chefs working together to deliver a fine dining restaurant experience in an event environment. All menu items are prepared, fresh on site daily using a quality range of produce sourced locally to compliment our boutique wine list.

Nathan Darling was born and raised in Surrey – United Kingdom. It was there in his home town in which his career as a chef began. In 1999 Nathan made the big decision to move to Sydney, Australia! To date he has headed the kitchen teams at Otto Ristorante, Bannisters By the Sea , Watermark Balmoral (now Public Dining Room) and Sails on Lavender Bay. Since 2016, Nathan has created world-class event menus at the venue for our plethora of bridal, corporate and private event clientele.

At Sergeants Mess service is paramount. We deliver a high ratio of staff to guests to ensure your experience is exemplary. Our dedicated and loyal team are our family. We employ all of them exclusively, which means everyone takes ownership of what they do.

Offering everything from whiskey bars to bespoke cocktails, European shared platters to the ability of offer an a la carte menu option for your wedding reception. We are happy to work with each couple to offer a tailored dining and service experience.
